Raw Balls - Food-Nutrition-Health Seminar Series - Dessert Powerhouses


This week we are creating a sweet snack which is raw and full of yummy nutrition! Enjoy your sweet snack knowing that it made from whole plants, it contains plenty of fiber and is full of nutritional goodness.

Ingredients

40 Dates

1 C Walnuts

1 C Lemon Juice (with the pulp)

1/2 C Cranberry (dried, no sugar added)

1/4 C Chia Seed (ground)

2 TBSP Raw Cacao

3 tsp Strawberry (dehydrated powder*)

2 tsp Cinnamon Spice

1 tsp Vanilla Spice

Guidance

Place the dates in your food processor

Blend/Mix until it forms a 'date ball'

Place the 'date ball' in a large bowl














Guidance

Juice the lemons (include the pulp)

Add Cinnamon, Raw Cacao, Vanilla and Dehydrated Strawberry powder


Mix well and add to your food processor

Blend/Mix the walnuts, ground chia and cranberries with the lemon juice in your food processor



















Guidance

Add this mixture to the large bowl containing the 'date ball' and mix by hand to ensure an even consistency


Allow to sit for 15 minutes for the chia to 'set' and thicken








Guidance

Roll into balls with your hands and then place in the refrigerator to chill and continue to 'set' - the chia seed will continue to thicken and the balls will firm up a bit


You can freeze the balls or simply store them in the refrigerator - the colder they get, the thicker and more 'set' they become
