Chocolate Cake and Cookies - Food-Nutrition-Health Seminar Series - Dessert Powerhouses


This week we are creating a WHOLE PLANT CHOCOLATE CAKE! Oh, and some cookies too - one recipe to make it all! Enjoy chocolate cake and cookies for break-fast or as snacks throughout the day, knowing that you sweet tooth is being satisfied with whole plants, with plenty of fiber and plenty of nutrients.


Crunchy on the outside - Ooey-Gooey on the inside!


The recipe below uses our dark chocolate sauce ingredients, but you could easily use the apricot/ginger sauce or the tart vanilla sauce for flavor - get creative with your Sweet Sauces and enjoy dessert any time, without dangerous processed sugars or fats.

Plants

20 Dates* (pitted)

5 C Orange Juice (with the pulp)

4 C Oat Groats (after soaking)

2 C Raspberries*

2 Vanilla Beans

2 C Water

1.5 C Chia (ground)

1 Avocado

1 C Walnuts (raw and soaked)

1 C Black Beans (cooked)

1 C Flax (ground)


Spices

2 C Raw Cacao

1 TBSP Ceylon Cinnamon

1 TBSP Vanilla

Preparation/Soaks

Soak the oat groats; rinse well

Soak the walnuts; rinse well

Soak the black beans; rinse well and cook



 

Guidance

Blend 1 Avocado - 1C Black Beans - 1C Water

Use your preferred blending appliance

Pour into a large mixing bowl

Blend 3C Oat Groats - 2C Raspberries - 1C Water

Use your preferred blending appliance

Add to the large mixing bowl




Guidance

Blend 1C Walnuts - 2 Vanilla Beans - 1 TBSP Ceylon Cinnamon

Use your preferred blending appliance

Add to the large mixing bowl






Guidance

Add the following ingredients to the large mixing bowl:

  • 20 Dates (pitted)

  • 4 C Orange Juice (with the pulp)

  • 2 C Raw Cacao

  • 1 C Oat Groats

  • 1 TBSP Vanilla Spice

Mix with a large spoon

Allow to 'sit' for 30 minutes to soften the dates





Guidance

Blend using a hand blender (I like to use an immersion blender)

Add 1.5C Chia (ground) - 1C flax (ground) - 1C Orange Juice (with the pulp) to the large mixing bowl

Mix with a large spoon

Allow to sit for 30 minutes for the chia and flax to 'soak' and thicken





Guidance - for the cookies

Roll into balls with your hands

Place on baking paper

Bake at 170C/340F for 45 minutes


Guidance - for the cakes

Fill your preferred baking dish evenly (until the mixture is about 2.5cm/1 inch thick)

Bake at 170C/340F for 45 minutes






Serve/Store Guidance

Allow to cool

Cut cake into desired sized pieces

Store cookies/cake in airtight containers in the refrigerator or freeze them

Serve warm with fresh berries or another one of our Sweet Sauces on top!
